Sliced Sirloin on Arugula
Adapted from Epicurious
(serves 4)
What You’ll Need:
5 oz arugula ($1.72 at $1.99/7 oz. bag)
1/4 cup extra virgin olive oil ($.32 at $.08/tablespoon)
1 sprig rosemary (free!)
2 cloves or garlic, smashed ($.06 at $.03/clove)
1 lb sirloin ($4.99/lb)
salt and pepper
2 shallots, sliced thin ($.69 at $2.99/lb)
2 1/2 tablespoons balsamic vinegar ($.15 at $.06/tablespoon)
2 1/2 tablespoons red wine vinegar ($.25 at $.10/tablespoon)
Instructions
Mound arugula on a large platter.
Heat oil with garlic and rosemary in a skillet over high heat, turning garlic once or twice, until garlic is golden, about 4 minutes. Discard garlic and rosemary.
Meanwhile, cut steak crosswise into 1/4-thick slices and toss with salt and pepper. Add meat to skillet all at once and sauté over medium- high heat, tossing with tongs to color evenly, about 1 minute for medium-rare. Arrange steak over arugula using tongs, then add shallot to oil in skillet along with vinegars and salt and pepper, and boil 2 minutes. Pour dressing over steak and serve immediately.
*NOTE: Not to be deprived totally of carbs, I added to the salad a few toasted baguettes topped with goat cheese (yes, I’m a goat cheese-aholic. The first step is admitting it, right?). Simply brush sliced bread with a little olive oil, top with goat cheese and broil for a couple minutes. But watch them! Those suckers can burn on you pretty fast.
TOTAL: $8.18 or $2.05 per serving. And you’re eating steak!!

Love this recipe. I would not have thought about slicing the steak before cooking, but it makes it so much faster. Would you consider adding the amount of fiber in your recipes to the nutritional information section? I am on Weight Watchers (again) and we use fiber in the points calculations.
Hey kelley! Love the site! we have tried 3 recipes so far and I am a true fan now of frugalfoodiefamily! This sirloin and arugula is our favorite so far. Serves 4? Not when Ray and Corrie are around to take seconds and finish off the last bites! So good! Can’t wait to try more recipes…
