balsamic roasted asparagus.

A simple, delicious way to prepare that asparagus you bought on sale this week! …or maybe that’s just me.

Balsamic Roasted Asparagus

(serves 4)

What You’ll Need:

1 bunch asparagus (on sale this week $2.99/lb)

1 tablespoon extra virgin olive oil ($.08 at $.08/tablespoon)

1 tablespoon balsamic vinegar ($.05 at $.05/tablespoon)

salt and pepper

2 tablespoons asiago or parmesan cheese, grated ($.20 at $4.99/lb)

Instructions

Preheat oven to 400.

Wash asparagus and trim off tough ends (about 1 inch).  Place on a roasting pan.  Sprinkle with olive oil and balsamic, then a generous amount of fresh sea salt and pepper.

Bake 8-10 minutes and top with cheese.

TOTAL:  $3.32 or $.83 per serving.
