grilled corn on the cob with smeared garlic butter.

Fire up the grill and get ready for a hands-on recipe!

Just smear the pre-shucked corn with a butter/garlic mixture, wrap them up in foil, and throw ‘em on the grill!  This would be a great side with grilled chicken and chipotle carrots since you’ll already have the grill going.

Grilled Corn on the Cob with Smeared Garlic Butter

(6 full corn or divide in half for 12)

What You’ll Need:

6 ears corn, shucked

4 tablespoons butter, softened

3 cloves minced garlic

lots of salt and pepper

Instructions

Preheat grill to high heat.

Mix butter, garlic, salt and pepper in a small bowl.  Using your clean hands (they better be or your family and guests will be mad), rub equal amounts of butter mixture all over each corn, then roll each corn tightly in foil like a burrito.

Place on heated grill and cook for approximately 30 minutes, turning occasionally for even cooking.

TOTAL:  $2.45 or $.41 per serving. (corn was 3 for $1 this week at Sprouts…yay summer!)
