southwest turkey soup.

Happy 2012!

Here are the Hartman house you’d never know Christmas happened, given the fact that I took it all down on December 26th at 7:30am and all traces of sugar, white flour and chocolate were history by that time as well.

And so we move on…to soup.  How exciting, I’m sure you’re saying to yourself.

Well this soup is high protein, low fat and all traces of slow-burning carbs come from beans and corn which are pretty good right?  And lastly, it’s got a bit of a kick to jump start your metabolism.*

*please note, I’m not a licensed doctor.  I don’t actually know for sure if spice speeds up your metabolism, it’s just a hunch.

Start by browning some ground turkey or chicken with a diced onion.

Next, add beans, corn, tomatoes, chiles, stock and seasonings.  Then let them get together for an hour or so and…

…about 15 minutes of prep and cooking and 1 hour of simmering later, your healthy start to the New Year begins!

Southwest Turkey Soup

(Serves 4-6)

What You’ll Need:

1 pound ground turkey or chicken (I look for $3.99/lb or less)

1 medium onion, chopped

1 cup cooked black beans

1 cup corn – fresh, frozen or canned

1 15-ounce can diced tomatoes

1 4-ounce can diced green chiles

3 cups turkey or chicken stock

3 tablespoons taco seasoning (or you can substitute a combination of chili powder, paprika, cumin, garlic powder and oregano, as I did using this taco seasoning recipe).

salt and pepper

garnish with cilantro, light sour cream, or avocado

Instructions

Brown the turkey meat with the diced onion in a large pot until turkey is no longer pink and onions are soft and transparent.

Add beans, corn, tomatoes, chiles, stock, seasoning and salt and pepper.  Simmer, covered, for 1 hour.  Taste for seasoning and adjust as necessary.  Top with light sour cream, cilantro, or avocado.

Serve with a side salad or cornbread and you’re likely under $2 per serving for a complete meal.

TOTAL:  $8.50 or $1.42 per serving based on 6 servings (even less if you cook your beans from dried rather than use canned beans).
