garlic roasted broccoli (or oh sweet mother broccoli).


Oh sweet mother.

How popular is broccoli at your house?  Well if you’ve been serving steamed broccoli to a less-than-enthusiastic crowd, or you’re looking to spice up your broccoli life, you’re in luck.

Oh sweet mother.  That’s what your family will be saying when you serve them this broccoli.

A friend with 2 quite active boys introduced me to a version of this recipe, and they happily ate their green trees (and so did we…again and again), so I knew I had a winner in this garlic roasted broccoli recipe!

That’s what we say when we enjoy this recipe, which is quite often (twice in the last week).  Andrew says he could put down this broccoli like french fries.

Enough said.

Garlic Roasted Broccoli

(serves 4)

What You’ll Need:

2-3 pounds broccoli, chopped (approx. 6 cups either just florets or florets and stalk too if that’s your thing, as it is mine)

4 garlic cloves, peeled and sliced

3 tablespoons olive oil, divided

salt and pepper

2 tablespoons lemon juice

3 tablespoons asiago or parmesan cheese, grated

Instructions:

Preheat oven to 425F
Place pre-chopped broccoli on a baking pan in a single layer.  Add sliced garlic and drizzle with 2 tablespoons olive oil.  Sprinkle with salt and pepper, then shake the pan a little so the olive oil coats the broccoli.
Cook broccoli 20-25 minutes, or until broccoli is tender and some florets might start to brown – that’s ok!  Remove from oven and toss with 1 tablespoon olive oil, lemon juice and cheese.  Serve immediately.
TOTAL:  $3.89 or $.97 per serving.
